The hottest pop-up this festive season has got to be the Dantean residency from twisted fire-starter chef Andrew Watkins. Known as one half of live fire-cooking innovators Acme Fire Cult, Watkins is up to his old tricks at St Leonard’s in Shoreditch this month, cooking up delicious flame-licked dishes made with minimal waste. Working mindfully with seasonal produce, Watkins’ menu includes bangers like coal roasted beetroot with whipped cheese, blackcurrant and macadamia nuts; hearth vegetable plate with coco beans and seeded rayu; and aged sirloin of beef with ancho and chilli butter. It’s going to be – dare we say it? – lit.
